Squash – Summer
*One pound= 1 Qty.
Summer squash is one of the treats from the garden in late spring and summer. Pattypan, zucchini, straight neck, crookneck, chayote, cousa, and more. Versatile and nutritious, they add a complex sweetness to many recipes.
The significant difference between summer and winter squash is storability. Summer squash has thin edible skin and flesh. Winter squash has a longer growing season to develop their thicker skins and firmer flesh. Winter squash can be stored for more extended periods versus summer squashes which are best eaten soon after harvesting.
