What are Green Tomatoes?

Green Tomatoes are unripe tomatoes with a tangy flavor enjoyed fried, pickled, and in sauce and relish.

At the end of the season (before frost), green tomatoes are purposely harvested before they ripen. This is why they’re regularly seen in late summer and early fall. When the temperatures drop to where the tomatoes on the vine no longer ripen, it’s green tomato season. 

Note: Green Tomatoes can be ripened (“most of the time”). place them in a warm place in a paper bag with an apple or banana (the ethylene gas for these fruits helps accelerate the ripening process).

Tomatoes are the primary dietary source of the antioxidant lycopene, which has been linked to many health benefits, including decreased risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
