The Chioggia Beet (pronounced kee-OH-gee-uh), also called Candy Cane and Candy Stripe beet. This beet originated in Northern Italy and became popular in the 19th century. It’s most distinguished for its stunning deep pink and white spirals, plus it adds a beautiful pop of color to salads and soups.

How to use it

The Chioggia Beet can be prepared like any other beet. It has a sweet flavor, and it doesn’t ‘bleed’ as much as regular beets, which means you don’t have to worry about the bright red beet juice staining your fingers and clothes. The Chioggia beet has a mild flavor, and so requires less cooking time than most varieties of beet. It’s important to be gentle when washing beets as you don’t want to break the skin, which will allow nutrients to escape.

Tip: When boiling Chioggia Beets, add a dash of lemon juice or vinegar to keep its color from fading.
