Lacinato Kale (also called cavolo nero, literally means “black cabbage,” in Italian) has a long tradition in Italian cuisine, especially that of Tuscany. It is also called Tuscan cabbage, Tuscan kale, Italian kale, dinosaur kale, flat back cabbage, black Tuscan palm or palm tree kale. This kale has been grown in Tuscany for centuries and is a traditional ingredient in minestrone and ribollita.
Lacinato Kale can grow up to 3 feet tall and has dark blue-green colored leaves with an “embossed texture.” This kale’s taste is slightly sweeter and more delicate than curly kale.” The Lacinato Kale is sometimes called “dinosaur kale” because its bumpy leaves resemble what dinosaur skin looked like.
