One of the oldest cultivated winter squash varieties (moschatas) in the U.S., Long Island Cheese has a flattened shape and is medium-large size. Smooth out skin, heavily ribbed tanned skin (suggest a wheel of cheese), a slender woody stem, and deep orange, moderately sweet flesh. Long Island Cheese is known as one of the best baking winter squash varieties.
