Zucchini is one of the bonuses from the garden in late spring and summer. It is considered a summer squash. Zucchini is rich in several minerals, vitamins, and other beneficial plant compounds.
The significant difference between winter and summer squash is storability. Summer squash has thin edible skin and flesh. Winter squash has a longer growing season to develop their thicker skins and firmer flesh. Winter squash can be stored for more extended periods versus summer squashes, which are best eaten soon after harvesting.
