Carnival winter squash is a somewhat new variety. It is a cross between the sweet dumpling winter squash and acorn winter squash. Known for its uniquely patterned and colored exterior. The color difference in the rind results from seasonal temperature variations, with warmer temperatures producing squash with slightly more pronounced green stripes.

Similar to Acorn squash it is usually baked, but can also be sauteed, steamed, or microwaved. It may be stuffed with meat, rice, or vegetable mixtures. The seeds of this winter squash can be toasted first and enjoyed like pumpkin seeds. Acorn squash can be used to make squash soup, as well.
