The significant difference between summer and winter squash is storability. Summer squash has thin edible skin and flesh. Winter squash has a longer growing season to develop their thicker skins and firmer flesh. Winter squash can be stored for more extended periods versus summer squashes which are best eaten soon after harvesting.
